Black Eyed Peas

This is a recipe that a friend gave me and it’s amazing. So you should make it. It’s one of my favorites. Thanks, Crystal. You're cooking is always fantastic.

1 pound black eyed peas
1 can rotel tomatoes
1-2 tbs salt (start with 1 and add the other if you need it)
1 can chicken broth
Ham hock, or 1-2 cups chopped ham
Water

Clean the beans well. Soak (either overnight or use the quick soak method). Drain beans. Add everything to a dutch oven making sure the beans are covered. Bring to a boil, then turn down and cook over low for several hours. Add additional water if needed. Cook until they are tender.

I got my peas at the store yesterday. I'm going to try this minus the ham hock. I hope this will freeze well...I have a feeling I'll be the only one in the house who will like!
